Medical Nutrition Therapy (MNT) for Chronic Conditions
About the Course
This course offers an introduction to medical nutrition therapy (MNT) with a lifestyle medicine approach. MNT will be defined, along with descriptions of plant-based approaches to be used as part of prevention and treatment of chronic diseases. The participants will also learn basic constructs of a variety of specific topics, such as calcium and B12, in addition to broader treatment prescriptions and behavioral approaches. Case studies will reinforce these introductory lessons.
Learning Objectives
  • Compare the Dietary Guidelines for Americans with nutrition recommendations by lifestyle medicine practitioners 
  • Describe a plant based diet and nutrition guidelines utilized by lifestyle medicine practitioners 
  • Discuss the role of proteins, healthy fats and quality carbohydrates in a healthy diet advocated in lifestyle medicine 
  • Assess vitamin B12 status and make appropriate recommendations for vegetarians and vegans 
  • Define medical nutrition therapy (MNT) and recognize its role in lifestyle medicine where nutrition treatment is preferred over medications as possible 
  • Describe approaches to providing MNT in acute care and outpatient settings 
  • Be able to use the 5 A’s approach in counseling a patient for change: Ask, Advise, Agree/Assess, Assist, Arrange 
  • Understand other evidence based approaches such as motivational interviewing (MI) require specific training for skill development 
  • Describe vegetarian and vegan eating approaches and evidence to support their use for prevention and treatment of metabolic syndrome, high blood pressure, cardiovascular disease, type 2 diabetes, and selected cancers 
  • Describe a rational approach to meeting calcium needs while evidence is uncertain Describe FODMAP (FermentableOligoDiMonosaccaridesAndPolyols) approach to managing IBS

Kathryn Kolasa, PhD, RDN, LDN

Kathryn Kolasa, PhD, RDN, LDN is a distinguished professor for teaching at the East Carolina University, as well as master educator and professor emeritus, ECU-Brody School of Medicine. She is a currently a consultant with Vidant Health System (since 2004). Author and co-author of over 130+ publications; weekly local news column she has received numerous rewards for her work which include: ECU Centennial Service Award and Medallion of honor from the American Academy of Nutrition and Dietetics. She is a graduate (and former faculty) of Michigan State University (BS) and Univ. of Tennessee Knoxville (PhD). Her academic claims to fame: nutrition in medical education; childhood obesity prevention and treatment; and nutrition education research.

Roman Pawlak, PhD, RD 
Associate Professor
East Carolina University

Roman Pawlak, PhD, RD, is the Associate Professor of the Department of Nutrition Science at East Carolina University. He earned his PhD from the University of Southern Mississippi, and MS from Andrews University. He is a registered dietician (RD) with the Academy of Nutrition and Dietetics. He has worked on Evidence-based Analysis on Vegetarian Nutrition for the Academy of Nutrition and Dietetics; has authored the “Vegetarian Toolkit,” “Position paper on Pegetarian Nutrition” and suthored “In defense of vegetarianism,” “Vegan/vegetarian mother and her baby,” “Vitamin B12, combating the epidemic of deficiency.”
